Well, its going to vary depending on what applications, and exact needs you have. Typically, two or three domain controllers are used for fault tolerance. One print server, and depending on how well its built, possibly one combined file/print server. Sometimes one other server for various utilities (running tape backups, antivirus server, etc). Possibly an IIS server for web applications.

Where I work we have 4500+ users in the USA at 139 sites. We have about 60 servers that run windows or unix depending on what they are used for.
